{Tasty Tuesday: Cheeseburgers with Grilled Onions}

We LOVE burgers at our house and normally save them for the weekend but this are super easy to make outdoors or indoors. Believe it or not this is a Weight Watchers recipe and only 7 PointsPlus value including the bun!

What you'll need:

  • 1 pound uncooked 93% lean ground beef
  • 1 clove garlic, minced
  • 1/4 tsp table salt
  • 1/8 tsp black pepper
  • 1/4 cup low-fat shredded Cheddar Cheese, sharp-variety
  • 1/2 small uncooked red onion, cut into 4 thin slices
  • 1/2 tsp olive oil
  • 1/8 tsp dried oregano, crushed
  • 4 reduced calorie hamburger rolls (We used Mrs. Baird's Grillin' Thins) 
  • 1 small fresh tomato, cut into 8 thin slices
Directions: 
  • Preheat grill to medium-hot heat
  • In a medium bowl, gently combine beef, garlic, salt and pepper; form into four 1/2 inch thick patties. Place on grill and cook 4 to 5 minutes on one side; flip and continue cooking until desired degree of doneness, about 3 to 4 minutes more. Sprinkle each burger with 1 Tbsp cheese; cook until cheese melts, about 1 minute. 
  • Meanwhile brush both sides of onion with oil. Grill until bottom is lightly browned, about 3 to 4 minutes. Flip onion and sprinkle with oregano, grill for 2 to 3 minutes more. 
  • Lightly toast open-faced buns on grill. Place burgers on buns and top each with onion and tomato slices. 
Serves 4

{High Five for Friday!}

I am so glad it's Friday! High Five for Friday is supposed to be a weekly post about my five favorite things from the past week. But, I haven't done High Five for Friday in a couple weeks so forgive me if they're not from this week. And I'm linking up with Lauren over at From My Grey Desk this week. If you have a High Five for Friday post go link up! 

So, here goes:

1. I finally got my new iPhone 4 for Christmas! Yes!

2. Texas Stars Hockey... one of my favorite things to do. And I had never been to a hockey game before last year when we realized the stadium is walking distance from our house. So, my in laws and brother in law came to Austin the week after Christmas and got to experience their first hockey game! 

3. We got to spend NYE in downtown Austin with some of my best friends from Dallas! 

4. Another one of my besties Monica is getting married! I can't attend the wedding but I'm so glad I got to attend her bridal shower. And it was at Macaroni Grill... yum! 

5. I will finally get to see my side of the family on Saturday for Christmas. Yeah, I know, kind of belated. But I am so excited! I've had their presents ready for weeks!!!
