What You'll Need:
- 4 Tilapia fillets {1 to 1 1/2 pounds}
- 4 sheets heavy duty aluminum foil, 12x18 sheets
- 1 bag {10 oz} fresh spinach leaves
- 1/2 medium red onion, thinly sliced
- 8 oz sliced mushrooms
- 1/2 cup Central Market Organics Soy Ginger Sauce {or other Asian dressing}
Directions:
- Heat oven to 450 F
- Divide fish into 4 portions. Place 1 portion in the center of each foil piece; season with salt and pepper. Place spinach, mushrooms, and onions {evenly divided} over each packet. Season again with salt and pepper.
- Bring up edges of foil; then drizzle 2-Tbsp sauce over each packet.
- Double fold tops and then ends of foil to seal. Place packets on baking sheet.
- Bake 12-15 minutes. Open packets carefully {steam will escape}. Serve immediately with brown or white rice.
